The Perfect Pot Pie

Hey, You! Follow these steps to make the "perfect" chicken pot pie. :D


What you will need:

1 pound organic chicken tenders
1/2 onion, chopped
1/2 cup flour
1 3/4 cup chicken broth
2/3 cup milk
1 (8.5 ounce) canned peas and carrots
salt, pepper, red pepper flakes, nutmeg
2 unbaked pie crust (Pillsbury)


Step 1: Brown chicken on both sides, and cook through until no longer pink, over medium heat,
in 3 tablespoons of butter, 2 and tablespoons of vegetable oil.

Once browned, remove from pan, and set aside on a cutting board.

Remove excess oil from the pan, but be careful not to let the leftover chicken stuff on the bottom of the pan out!

Return the pan to heat.







Step 2: once the pan has reheated over medium heat, add chopped onions, cook until translucent and caramelizing.







Step 3: Once step 2 is complete, whisk in flour, salt, and pepper.

Slowly stir in chicken broth, allowing mixture to blend before adding more broth.

Slowly stir in milk.

Add spices.

Let simmer until the mixture has thickened.








Step 4: While the sauce is simmering, shred the chicken and drain the can of peas and carrots.







Step 5: Assemble. Place one crust on the bottom of the pie pan. Fill with chicken first, then peas and carrots. Finally pour our heated and thickened mixture over the chicken, peas, and carrots. Then place the second pie crust on top. (I also brushed an egg wash on the top crust before putting it in the oven! a secret to golden brown delicious crust!)


Step 6 & 7: Bake at 425 for 30 minutes. Let cool for a few minutes before serving. Then EAT!
