Chick.. Chick.. Chicken Parm!


To make this fabulous chicken parm, some of the things you will need: (No Coors Light was harmed in the process of making this dinner, it is purely for refreshment) ;)


You will also need: either homemade marinara sauce (which I made) or your favorite store brand (I would go with Bertolli Tomato Basil) and mozzarella cheese. Since I know you guys like to get straight into the pictures, I will include the recipe for homemade sauce and directions for making this dish at the bottom of the post.



Homemade Marinara Sauce Recipe:
- 1 (28 ounce) can crushed tomatoes
- 1/2 large onion, chopped
- 3 cloves of garlic, finely chopped
- salt, pepper, red pepper flakes, a bay leaf, sweet basil (all dry spices)

Sauté the garlic and onions in two tablespoons of butter until translucent. Add can of crushed tomatoes and dry spices and simmer at least 90 minutes.

Chicken Parm Recipe:
- 1 pound organic chicken cutlets
- homemade (or store bought) marinara sauce
- ricotta cheese
- mozzarella cheese
- half a box of pasta (your choice, I only had bowties on hand tonight)

Bread the chicken (use two bowls; in one bowl mix egg and milk, in another add Italian seasoned bread crumbs) and fry in vegetable oil on both sides until golden brown. Cook pasta until al dente, according to directions on the box, drain. Mix pasta with a cup of sauce in the bottom of a 9x13 inch glass baking dish. Top with chicken. Smear ricotta cheese on top with chicken, then top with sauce, and finish with a nice layer of mozzarella cheese. Broiler until cheese is brown and bubbly on top.
