Gruyere Cheese

Since this cheese is a main ingredient in tonight's meal (Lobster Mac and Cheese) I figured I would check out what it actually is, and especially since it is called for in most of the recipes I see on the Food Network.

So Wikipedia says that Gruyere is a hard yellow cheese that is made from cow's milk named after the town of Gruyeres in Switzerland. Wisegeek says Gruyere is in the family of Swiss cheeses, a group of semi firm pale cheese stippled with small holes or air pockets.

That still doesn't help me out with what it is...but I'll take it for now. It smells amazing in my oven.
