Banana Banana Bread

Like my doubled up titles today? ;)

I have had a few bananas sitting on my counter for the last week waiting to be turned into something amazing, and today is the day! They were pretty over-ripened by this morning, probably on the brink of not being able to use them, but what's the fun in that?

Also, I think I will add the recipe today, since it is so simple and delish. :) So here it is:

3 or 4 overripe bananas, mashed
2 large eggs
2 cups of all-purpose flour
1 teaspoon of baking soda
1/4 teaspoon salt
1/2 cup of butter, softened
3/4 cup of brown sugar

Ok, first things first, preheat the oven to 350. In a large bowl, cream together the butter and sugar. Once combined add one egg at a time and continue to cream. Add the mashed bananas to the bowl. Then I decided to go ahead and sift together the flour, baking soda, and salt, and slowly incorporate it into my mashed banana mixture. Here is where it got messy, doing this by hand make sure to slowly fold in the sifted flour mixture, otherwise you will end up wearing it much like I did. Once everything is combined, pour the batter into a lightly greased loaf pan and stick it in the preheated oven for about 60 minutes, or until a toothpick inserted in the middle comes out clean. I actually use a BBQ skewer to check it and it seems to do the job well.

Hopefully after an hour the bread looks like and tastes as amazing as this does.
